This week we are celebrating Inclusion week which celebrates our diversity and inclusion.

Did you know Coláiste Eoin has 18 different nationalities among both its students and staff?

These are the nationalities we are aware of and apologies if we have left anyone out.

Irish, Ukrainian, Spanish, Syrian, Brazilian, Romanian, South African, German, Indian, Polish, Malaysian, Hungarian, Jamaican, English, Italian, Danish, Portuguese and the Philippines.

We are a multicultural school.

At lunchtime today we celebrated our cultural diversity by having an international lunch with food cooked by the students and their families.

We had a fantastic variety and selection of food for our delicious lunch. All this food was provided by the students.

Well, done to all our students as we ate very well today from Irish venison burgers locally sourced and made with a secret family recipe. Soda bread and mature cheddar cheese, Spanish omelettes with antipasto, delicious Ukrainian dumplings, Syrian cake (that disappeared in a flash, which speaks volumes), Portuguese chorizo stuffed bread, Brazilian fried chicken dumplings, French cheese, Italian pizza with salami, mozzarella sticks and olives, English pies and French crepes.

Looking forward to tomorrow when all our first-year students during their first class will enjoy our healthy Irish breakfast of porridge with delicious toppings.
